Tahini sauce holds a surprise: thinner at first, it thickens the moment you add the lime juice, the acid setting the sesame paste. You then loosen it with water to the consistency you want. Essential with falafels, roasted vegetables or a hummus.
Ingredients
- ¾ cup tahini paste
- 2 large cloves of fresh garlic
- A pinch of salt
- Juice of 1 lime
- ⅕ cup water
Preparation

Put the garlic, salt and tahini in a food processor and blend. Add the water little by little until smooth.

Add the lime juice and blend: the sauce thickens. Loosen with a little water to the texture you want.

Taste and adjust the salt or tahini if needed, then blend one last time. Tip: when you open the jar of tahini, whisk it with a fork — the oil rises to the top and the bottom sets hard.
