  • Fresh, colourful produce — the more colours on the plate, the wider the range of nutrients and antioxidants.
  • Simple tools: a good knife, a chopping board, a blender and a pan. That’s the essentials.
  • A little organisation — batch-cook your grains and you’re already halfway to dinner, every night of the week.

Why does variety of colour matter?

It’s sometimes called the “colour diet” — and it’s one of the simplest healthy eating habits to adopt. Eating “by colour” means putting fruits and vegetables from the five main colour groups on your plate. Each natural colour signals a different family of phytonutrients, antioxidants and protective compounds:

  • 🔴 Red (tomatoes, strawberries, rocoto, red maca) — lycopene and anthocyanins
  • 🟠 Orange / Yellow (lúcuma, ají amarillo, sweet potato, squash) — carotenoids and vitamin C
  • 🟢 Green (leafy greens, herbs, avocado) — chlorophyll, folate and magnesium
  • 🟣 Blue / Purple (purple corn, native potatoes, aguaymanto) — anthocyanins and polyphenols
