Oat Banana Bread

This banana bread needs no flour: oat flakes give it body, and ripe bananas stand in for the sugar. Mash them ahead — that is the only waiting time in the recipe.

Ingredients

  • 6 medium or large bananas
  • 150 g rolled oats, or 100 g rolled oats and 50 g desiccated coconut
  • 70 g coconut oil or 20 g cocoa butter
  • 5 or 6 eggs, or 50 g chia seeds
  • 10 g ground cinnamon
  • 5 g salt
  • 1 tsp bicarbonate of soda

Preparation

Mash the bananas the day before, or 2 to 3 hours ahead, and set them aside in a bowl, ideally glass.

Beat the eggs in a large bowl. Add the coconut oil, cinnamon and salt, then the mashed bananas. Mix well, add the oats and mix thoroughly.

Pour into a rectangular tin and bake for about 20 minutes at 160 °C.

Remove from the oven and leave to cool for at least 1 hour. Perfect for breakfast or teatime.
