Amaranth was a sacred grain of the pre-Columbian civilisations. Its tiny seeds make a creamy porridge, which black cardamom — smoky, almost resinous — lifts out of the ordinary.
Ingredients
- 100 g organic amaranth grains
- 7 dates
- 1 cinnamon stick
- 1 black cardamom pod
- A hint of salt
- Coconut milk
Preparation

Put the amaranth in a fine sieve and rinse until the water runs clear.

In a saucepan, boil the cardamom with the cinnamon stick for 10 minutes, then add the salt, dates and amaranth. Bring to a boil, reduce the heat and simmer for 10 to 12 minutes, stirring frequently, until the liquid has been absorbed.

Pour into a glass or bowl, then top with coconut milk, pollen balls, goji berries, raw honey, ground cinnamon, nuts and the fruit of your choice.
